About Kerala Chicken Roast Recipe | Chicken Roast Recipe:

A recipe for fried chicken that is bursting with flavorful aromas and sour spices. This meal highlights the dish's true South Indian flavor. This meal can be prepared as a side dish for a dinner party. It pairs beautifully with rice and your preferred Indian bread.

Kerala chicken roast is a succulent mixture of soft, marinated chicken that has been fried and sautéed with a hot, sour masala paste. It is semi-dry and delectable. teamed up with some lemon juice, fried onions, and chilies to give this dish an extra kick.


Ingredients of Kerala Chicken Roast

For the marinating:

  • ·                 500 gm chicken cut piece
  • ·         1/4 teaspoon of ground turmeric
  • ·         Coriander powder, 1/4 teaspoon
  • ·         1/4 teaspoon of ground turmeric
  • ·         1/4 teaspoon of chili powder
  • ·         1 teaspoon lemon juice/vinegar
  • ·         5 cloves of garlic
  • ·         3 to 5 green peppers
  • ·         Salt as per taste

For roasting:

  • ·            Three medium onions
  • ·         1 large tomato, blanched and puréed
  • ·         2 chopped green chilies
  • ·         3 curry leaf sprigs
  • ·         Garam masala powder, 1/4 teaspoon
  • ·         1/4 teaspoon of pepper powder
  • ·         One lemon, juiced
  • ·         Oil according to need

How to make:

  • Chicken should be cleaned and sliced into medium-sized pieces. Combine all the ingredients listed under marinating in a paste.
  • Put this paste over the chicken pieces and marinate them for an hour.
  • Slice the onions very thinly and cook them in heated oil. Drain them, and then set them apart.
  • In the same oil, fry the chicken pieces until almost finished. Keep the lid on the pan to ensure that the chicken cooks through without getting browned. Drain them, and then set them apart.
  • Use the same oil we used to fry the chicken pieces to heat 2 tbsp in a different pan. This will improve flavor. Curry leaves and sliced green chilies are added. 1 minute of sautéing.
  • To this, add the tomato paste, and cook for one minute. The chicken is now added, and it is roasting until it is dry.
  • Ensure that the tomato paste is well covered on all of the chicken pieces.
  • Sprinkle pepper powder and garam masala, then combine well.
  • Blend thoroughly after adding lemon juice. Look for salt. If more is required, add some. After that, thoroughly combine the fried onions.
  • Delicious Keralan roast chicken is prepared.
