- 1 tsp salt
- 4 tsp curd
- 5 medium potatoes (slices)
- 5 tbsp mustard oil
- 2 bay leaves
- 2 cardamoms
- cinnamon stick
- 2 dry red chilli
- 3 onions (chopped)
- 2 big onions (paste)
- 3-4 tsp ginger garlic paste
- 1 tsp cumin powder
- 1 tsp coriander powder
- 1/3 tsp turmeric powder
- Salt as per taste
- 2 tomatoes (chopped)
- 1 tsp red chilli powder
- 1 tsp garam masala
- as required coriander leaves to garnish
- Heat mustard oil in a frying pan, then add the potato and fry for some time till it turns golden brown. Then remove it and keep it aside on a plate.
- Again, add some oil to the frying pan and add the bay leaf, dry red chilli, cinnamon, and cardamom.
- Now add onion paste and ginger-garlic paste and stir for another 3–4 minutes.
- Add chopped tomatoes, turmeric powder, cumin powder, and red chilli powder and mix well.
- Add a little water to the mixture.
- When the water dries out and the oil begins to separate from the masala, add the chicken. Mix it all properly.
- Then stir the mixture continuously for about 15–20 minutes at intervals of every 5-7 minutes to check whether it has not burned.
- Then add the fried potatoes and a cup of water. Cover the pan and let it cook for 10 minutes on medium heat until the potato and chicken are properly cooked.
- Finally, add coriander powder, garam masala powder and chopped coriander leaves and switch off the flame. Odia-style chicken curry is ready.
