Maharashtra Style | Spicy Malvani Chicken Curry Recipe
This a fantastic recipe for anyone who enjoys spices! A spicy, mouthwatering chicken recipe that will leave your taste buds yearning for more is malvani chicken curry. The Konkan region of Maharashtra and Goa is where Malvani cuisine originated, and the majority of its dishes heavily feature coconut. This recipe makes a stimulating chicken curry in the traditional Malvani style by cooking the chicken in a rich, thick coconut broth with a fiery Malvani spice.
Integridents
For gravy -
- Chicken (cut into small pieces)
- 100 ml Water
- 4 tsp. Refined oil
- 3 Onions (chopped)
- Handful of Coconut (grated)
- Handful of Coriander leaves
- Salt as per taste
- 1 Bay leaf
- 1/2 Nutmeg
- 6 Cloves
- 6 dry red chillies
- 8 black peppercorns
- 1 large cinnamon stick
- 1 tsp. cumin seeds
- 1 tsp. coriander seeds
- 1 tsp. red chili powder
- 1/2 tsp. turmeric powder
- 3 green chilies
- 6 garlic cloves
- 1 coconut (grated)
- 3/4 inch ginger
- All of the Malvani masala's ingredients are pan-dried and roasted before being coarsely ground.
Then, in a food processor, combine all of the ingredients for the coconut masala to make a paste.
Heat the oil in a kadhai, then add the onions and ground coconut masala.
Cook for about 10 minutes, stirring occasionally.
Add 3–4 tsp powdered Malavani masala, red chilly powder, and salt to taste.
Add the chicken and then the water.
Cover and cook for approximately forty minutes, till the gravy thickens and the chicken is cooked.
Garnish with coriander leaves and grated coconut as desired.
Serve immediately and enjoy!
